Lucky for you, I rounded up some of my favourite summer recipes that include no-cook dinners so you can keep things light and fresh. Recipes Using Leftover Chicken
One of my secrets to easy no-cook summer dinners is using up leftover chicken I have in the freezer. Simply let it thaw in the fridge overnight before using it in these wraps and salads. You could also use rotisserie chicken in these recipes to make them even easier!

Best No-Cook Meals for Summer
Ingredients
- 2 cups buffala mozzarella cheese, sliced
- 8 slices bread
- 2 plum tomatoes, sliced
- 1/4 cup red onion thinly sliced
- 1 cup fresh basil
Instructions
- Heat a large skillet over med-low heat. Butter each piece of bread, or spray with a bit of plant-based cooking spray.
- Add cheese, tomato and red onion to 2 slices of bread to make one sandwich. Season with salt & pepper. Add to pan butter side down.
- Cook for about 2-3 minutes each side, watching that the bread doesn‘t burn. When sandwiches are finished, open them up and add fresh basil. Serve and enjoy!
