Healthy Crockpot Chicken Recipes
Looking for an easy and hands-off dinner idea? These healthy crockpot chicken recipes are where it’s at! The slow cooker is one of my favourite meal prep tools when I want to just dump everything in a pot, set it and forget it. I rounded up some of my favourite crockpot recipes that will make meal prep and dinnertime a breeze.
The ingredients in all of these slow cooker recipes are very basic – you might even have some of them in your fridge or pantry already. Most of the sauces you’ll marinate the chicken in have less than 5 ingredients. From there, you can serve your crockpot chicken with a couple of veggies and any type of starch. Trust me, these meals are super easy to throw together and are so good.
Ingredients and substitutions
- Chicken breasts – you can also try making these recipes with boneless skinless chicken thighs.
Coconut curry chicken
- Curry powder – make your own using a blend of cumin, coriander, chili powder, turmeric and pepper.
- Turmeric – saffron would also be good here.
- Garlic – use either freshly minced or jarred minced garlic.
- Salt – to taste.
- Coconut milk – you can use low-fat or full-fat coconut milk for this recipe.
- Cauliflower – swap out for broccoli instead.
- Carrots – celery or bell peppers would also be yummy.
Honey sesame chicken
- Sesame oil – you can use a neutral cooking oil like olive oil, but it won’t have the same sesame flavour.
- Low-sodium soy sauce – coconut aminos or tamari are the best substitutes for soy sauce.
- Honey – agave, maple syrup or brown sugar will also add a bit of sweetness to your marinade.
- Garlic – use either freshly minced or jarred minced garlic.
- Broccoli – cauliflower would be good or you can use another vegetable of your choice.
- Carrots – celery or bell peppers would also be yummy in this recipe.
Cilantro lime chicken
- Olive oil – or any neutral cooking oil of your choice such as canola or avocado oil.
- Lime juice – freshly squeezed lime juice is best but bottled will work in a pinch.
- Honey – agave, maple syrup or brown sugar will also add a bit of sweetness to your marinade.
- Cilantro – parsley would be good too although it won’t have the same flavour.
- Garlic – use either freshly minced or jarred minced garlic.
- Salt & pepper – to taste.
- Yellow pepper – swap out for another colour bell pepper like red or orange pepper.
Greek chicken
- Olive oil – or any neutral cooking oil of your choice such as canola or avocado oil.
- Lemon juice – freshly squeezed lemon juice is best but bottled will work in a pinch.
- Garlic – use either freshly minced or jarred minced garlic.
- Oregano – basil or parsley would be the best substitutes here.
- Salt & pepper – to taste.
- Red pepper – use another colour bell pepper like yellow or orange pepper.
- Zucchini – serve with eggplant or cucumber instead.
Marinara chicken
- Marinara sauce – use your favourite store-bought marinara or tomato sauce.
- Garlic – use either freshly minced or jarred minced garlic.
- Italian seasoning – make your own using a combination of dried oregano, basil, thyme, sage and rosemary.
- Salt & pepper – to taste.
- Spaghetti – or another noodle of your choice.
- Zucchini – swap out for another vegetable like bell peppers.
How to make crockpot chicken
Step 1: Marinate the chicken.
If you're meal prepping or freezing the chicken, add it to a Ziploc bag with the sauce or seasonings.
Step 2: Add everything to the crockpot.
When you're ready to cook, add the chicken and sauce to the crockpot.
Step 3: Cook the chicken.
Cook on high for 4 hours or low for 6 hours.
Step 4: Add the veggies.
If you're adding in any veggies, add them in during the last hour of cooking time.
Step 5: Cut up the chicken.
Once the chicken is done cooking, remove it from the pot and shred or dice it, then add it back in with the veggies. Gently stir to combine.
Step 6: Serve and enjoy!
Serve over rice or pasta, or store in glass meal prep containers for later.
Meal prepping crockpot chicken
These crockpot chicken recipes are great for meal prep! There are two different ways you can prep them:
- Fridge: Store the chicken and marinade ingredients in a Ziploc bag for up to 2 days. When you're ready to cook, just dump everything in the crockpot and cook!
- Freezer: Freeze the raw chicken and marinade ingredients in a Ziploc bag for up to 3 months. Let the bags completely defrost in the fridge overnight, then dump everything in the crockpot and cook as normal.
Frequently Asked Questions
I wouldn't recommend it. It can take a long time for frozen food to thaw in a slow cooker, especially when cooking on the low setting. After frozen chicken thaws, it has to reach an internal temperature of 165 °F (74 °C) to be safe to eat and depending on the size of the frozen meat, that can take longer than 2 hours. The safest thing to do is to thaw frozen chicken fully before cooking it in a slow cooker. Remember to use a cooking thermometer to make sure that the chicken is fully cooked before eating it, too.
Yes, it's perfectly safe to put raw chicken in the slow cooker! In fact, the slow cooker is designed to cook raw meat.
There's no need to brown the chicken first! You can just add it to the crockpot raw and it will fully cook. If you want, you can sear the chicken before adding it to the crockpot, but it's really not necessary.
For these crockpot chicken meal prep recipes, I'd recommend cooking the chicken breasts whole, then cutting up the chicken or shredding it after it's finished cooking. This will ensure it's nice and moist!
It's honestly a matter of preference and how much time you have. If you have the time, I'd recommend cooking on low for 6 hours, as there's less of a chance of the chicken drying out.
The Best Crockpot Chicken Marinades

These recipes have more liquid ingredients than you'd see in a regular chicken marinade to prevent the chicken from drying out. Plus, most are made using pantry staples you likely already have on hand!

Storing and reheating
Once you've cooked your healthy meal with chicken, you can store everything in the fridge for up to 5 days in glass meal prep containers. When you're ready to enjoy, sprinkle some water over top of the chicken so it doesn't dry out, and microwave for 1 to 2 minutes. You could also reheat in a pan on the stovetop.
Freezing crockpot chicken
You can freeze these cooked crockpot meal prep chicken recipes for up to 3 months. Don’t leave them at room temperature before freezing though; make sure you chill them in the refrigerator. I also wouldn’t recommend freezing certain vegetables or pasta – try to just freeze the chicken if you’re not sure if the rest of the ingredients will defrost well.
You can reheat directly from frozen in the microwave for 4 to 5 minutes, or let the chicken defrost in the fridge overnight then reheat as normal. Don't forget to sprinkle some water over top beforehand to avoid that dreaded leftover chicken taste!

- Get a meat thermometer to make sure your chicken is cooked through.

Healthy Crockpot Chicken Recipes {5 Ways}
Ingredients
Coconut curry chicken
- 1 lb chicken breasts
- 1 tbsp curry powder
- 1 tsp turmeric
- 4 cloves garlic, minced
- 1 tsp salt
- 1 (400mL) can coconut milk
- 1 head cauliflower, chopped into florets
- 2 carrots, sliced
Honey sesame chicken
- 1 tbsp sesame oil
- 1 lb chicken breasts
- 1/4 cup low sodium soy sauce
- 2 tbsp honey
- 4 cloves garlic, minced
- 1 head broccoli, chopped into florets
- 2 carrots, sliced
Cilantro lime chicken
- 1 tbsp olive oil
- 1 lb chicken breasts
- 1/4 cup lime juice
- 2 tbsp honey
- 1/2 cup fresh chopped cilantro
- 2 cloves garlic, minced
- 1 tsp salt
- 1 red pepper, sliced
- 1 yellow pepper, sliced
Greek chicken
- 1 tbsp olive oil
- 1 lb chicken breasts
- 2 tbsp lemon juice
- 4 cloves garlic, minced
- 1 tbsp oregano
- 1 tsp salt
- 1/2 tsp pepper
- 1 red pepper, sliced
- 1 zucchini, sliced
Marinara chicken
- 1 lb chicken breasts
- 1 (696mL) jar marinara sauce
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/2 tsp each salt & pepper
- 1 lb spaghetti, cooked
- 1 zucchini, sliced
Instructions
- Add chicken and sauce ingredients of choice to crockpot. Cook on high for 4 hours or low for 6 hours. You may choose to add and cook vegetables such as bell peppers, cauliflower, zucchini, broccoli, etc. in the last remaining hour of cook time instead of the full cook time.
- Once cook time is up, remove chicken and shred or chop. Add back to crockpot with vegetables and gently stir to combine.
- Serve over rice or pasta (optional), as desired. Enjoy!
- To freeze: add all ingredients to a large freezer-safe Ziploc bag and freeze up to 3 months. Defrost in the fridge overnight then add to crockpot to cook once fully defrosted.
