These 15 Minute Spicy Noodles are a lifesaver when you don't know what to make for dinner! They're fast, easy and made with pantry staples.
Ingredients and substitutions
- Ramen noodles – use any variety of ramen noodles of your choice.
- Eggs – you can leave these off or add in another protein option like chicken or tofu!
- Low sodium soy sauce – coconut aminos or tamari are the best soy sauce substitutes.
- Chili oil – if you don’t have any chili oil, add in some sambal oelek or extra sriracha.
- Honey – maple syrup or agave would also help sweeten the noodles.
- Sriracha – Sambal oelek would also work here.
- Minced garlic – freshly minced garlic has the best flavor, but jarred minced garlic can be used in a pinch.
- Green onions – substitute for chives or scallions instead.
- Sesame seeds – white or black sesame seeds would both be good.
- Cilantro – leave this off if you’re not a fan of cilantro.

Spicy noodle variations
Here are different ways you can customize this spicy noodles recipe:
- Add protein: Add some tofu, shrimp, chicken or beef on top of your noodles for a complete meal.
- Mix up the veggies: I typically just add green onions to these noodles, but feel free to add in any vegetables of your choice like mushrooms, carrots, bell peppers, bok choy, cabbage, broccoli and more.
- Try different noodles: You can use ramen, rice noodles, udon noodles or pretty much any noodle variety of your choice for this recipe. Just make sure you adjust the cooking time.
- Use other sauces: I used a simple combo of soy sauce, chili oil, honey and sriracha, but feel free to try out different flavor combos for the sauce. Sweet chili sauce, oyster sauce or hoisin sauce would all be good additions.
- Adjust the spice level: Adjust the amount of hot sauce depending on your level of spice tolerance.

Storing and reheating

Freezing this recipe
Unfortunately, these spicy noodles aren’t freezer-friendly, since the ramen will get mushy when it defrosts. Luckily, the noodles only take 15 minutes to make, so they’re super fast!
