Creamiest Marry Me Chicken

Ingredients

  • 1 tbsp olive oil
  • 1 lb chicken cutlets 4 cutlets
  • 1 tbsp butter
  • 4 cloves garlic minced
  • 1/2 cup sundried tomatoes julienned
  • 1/4 tsp each salt & pepper
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 cup parmesan cheese freshly grated
  • 2 cups baby spinach
  • 1/2 cup fresh basil chopped, for garnish

To serve

  • 1/2 lb pasta like spaghetti, rigatoni, penne or rotini

Instructions

  • Heat olive oil in a skillet over med-high heat. Season chicken cutlets with salt & pepper, then add to pan, searing on each side for 3-4 minutes until browned. Remove chicken from skillet and set aside.
  • Meanwhile, add pasta to a large pot of boiling water and cook for 10 minutes until al dente. Drain and set aside.
  • Add butter to the skillet, then add garlic and sundried tomatoes and saute for 30 seconds. Add broth and cream, bringing to a boil, then stir in parmesan cheese. Season with salt and pepper to taste, then stir in spinach, cooking another 30 seconds until wilted. Add chicken back to skillet and remove from heat.
  • Serve chicken alongside pasta, garnishing with basil and more parmesan cheese if desired. Enjoy!

Notes

Serve this dish over pasta, mashed potatoes, rice or zucchini noodles.
To add even more flavour, add a bit of sundried tomato oil to the pan with the butter, garlic and sundried tomatoes.
Cut boneless skinless chicken breasts in half lengthwise to make your own cutlets.
You can try making this recipe dairy-free by using margarine and a dairy-free cream substitute of your choice.
Store the leftovers in the fridge for 3-4 days, then reheat in a skillet on the stovetop over low heat.
